Last June 6, 2025, Mama Lou’s Premio Ristorante at Alabang West Parade became more than a fine dining destination as it became a venue for purpose. For one night only, it hosted an experience that combined flavor, fellowship, and advocacy in a deeply meaningful way.
“Echoes of Hope: A Journey in Taste & Tribute,” a fundraising dinner organized by JCI Manila, brought together food lovers, philanthropists, and changemakers to support Project TINIG, an initiative dedicated to giving children with cerebral palsy a voice through technology. The event was spearheaded by Community Development Director Bobbit Castro and Project Chairman, Past LOM Director Joe Louise Garcia, under the flagship Golden Heart Initiative of the chapter.

At the heart of the campaign is the Tinig App, a free mobile communication tool created to help non-verbal children express themselves using customizable icons, words, and audio prompts. The app enables users to communicate with caregivers, family members, and teachers; bridging a gap that too many families in the Philippines continue to face.
Since its launch, the app has reached nearly 1,000 downloads, and with the support of JCI sister chapters in Cagayan de Oro, Davao, and Iloilo, the program continues to grow. The goal of the evening was both simple and profound: to raise funds to keep the Tinig App free for the next three years, ensuring that more children with cerebral palsy can access the gift of communication… without cost.
The evening began with a heartfelt welcome from Project Chairman Joe Garcia, who shared how Project TINIG was born out of a simple, powerful idea: that every child deserves to be heard. His message was followed by an inspiring talk from Sam Sanchez-Domingo, Programs Head of the Communicare Center for Children, who emphasized how augmentative and alternative communication apps are transforming therapy and learning experiences. The program also featured remarks from the President of CP Cares, the event’s official beneficiary, who shared personal stories of hope, struggle, and breakthrough.

Then came the meal—an elegant, carefully curated five-course tasting menu that offered more than nourishment. It offered meaning.
The evening’s gastronomic journey was brought to life by Chef Bryan Eusebio, Chef Karl Vincent Manlapaz, and Chef Clifford Lee, whose collaborative creativity resulted in a menu both sophisticated and soulful. Each course was thoughtfully paired with wine to elevate the flavor and the feeling behind each dish.
PUMPKIN SERENADE
Roasted Pumpkin & Shrimp Bisque
Velvety and comforting, this opener featured roasted pumpkin and shrimp, laced with guanciale and served with warm house-made breadsticks. Paired with La Gioiosa Prosecco DOC Brut, it set the tone for a refined evening.
WHISPERS OF BLOOM
Harvest Fruit Salad with Honey Sesame Dressing
A refreshing blend of fruits, nuts, and green gelée, brightened by a fragrant sesame-honey vinaigrette. The sparkling Prosecco kept it crisp and lively.
VOICE OF THE ORCHARD
Chilled Mango & Apple Semifreddo

A tropical palate cleanser made from ripe mangoes and green apples, chilled to the perfect texture. It offered a moment of pause before the showstopper.
LAYERS IN HARMONY
Beef Morcon Wellington with Whiskey Peppercorn Sauce
A creative take on a Filipino holiday classic. Beef roulade was wrapped in golden puff pastry and served with a rich whiskey peppercorn sauce and asparagus spears. Paired with the earthy Belvento Salento, it delivered warmth and depth.
CHOCOLATE CRESCENDO
Chocolate Moelleux with Raspberry & Fior di Latte Gelato

A rich, molten chocolate cake layered with raspberry gelée and Araguani mousse, finished with Fior di Latte gelato and matcha crumble. La Gioiosa Moscato completed the evening with a sparkling touch of sweetness.
The event took place at Mama Lou’s Premio, the upscale offshoot of the beloved Mama Lou’s Italian Kitchen, known for its fresh pastas, Neapolitan-style pizzas, and curated wines.
Mama Lou’s became a partner in advocacy through the generosity of David Sison, co-founder and CEO, and a proud JCI Manila member. Alongside his wife and business partner, Managing Director Crystal Sison, they opened not only their restaurant, but their hearts to the mission of Echoes of Hope.
By night’s end, after the final toast and the last spoonful of dessert, one thing was clear… It was an act of solidarity. It was a reminder that innovation, empathy, and community can come together over something as universal as a shared meal.

Thanks to the generosity of the guests, partners, and organizers, Project TINIG is now one step closer to keeping the app free for the next three years, allowing hundreds more children to connect, express, and thrive.
Because when we come together to serve, not just food, but purpose. Hope doesn’t just echo. It resounds.
